Description to D.O. Utiel-Requena
The DO area for red and white wines is located in the Spanish region of Valenciana in the Levante and is named after two towns located in the centre. Extreme climatic conditions prevail. In the hot summers there are temperatures of up to 40 °C, in the cold winters down to minus 15 °C. The vineyards at 600 to 1,000 metres above sea level cover about 40,000 hectares. Of these, 32,000 are occupied by the Bobal grape variety alone, which is traditionally cultivated in bush style. A large part of it is over 50 and even up to 100 years old. Accordingly, yields are very low, resulting in red wines rich in tannins and extracts. Other red wine varieties are Tempranillo, Garnacha Tinta, Cabernet Sauvignon, Merlot and Syrah. White wine varieties make up only 5%, these are Macabeo, Planta Nova, Merseguera, Sauvignon Blanc and Chardonnay.
For the main variety Bobal, there is the special grade "Bobal Clásico". These red wines must come from vines over 50 years old and may have a maximum yield of 3,000 kilograms/hectare. In addition, artificial irrigation is not permitted for these vineyards. A speciality is the Doble Pasta, a dark-coloured and extract-rich red wine produced according to a special process. By special regulation, the wines may be blended with those from the adjoining DO area of Valencia to the east (and vice versa). As enclaves, there are four areas classified as Vino de Pago:
