The winery is located in the municipality of Korb (Remstal-Stuttgart area) in the German wine-growing region of Württemberg. It was established by Albrecht and Andrea Schwegler at the beginning of the 1990s. After working at wineries in Germany, Switzerland, California and New Zealand, the next generation, Aaron Schwegler and his wife Julia, joined the business in 2009. Since then, white wines have also been produced.
The vineyards cover 12 hectares of vines in individual sites in the municipalities of Endersbach, Großheppach, Korb and Schnait. They are planted with the red wine varieties Zweigelt, Cabernet Franc, Cabernet Sauvignon, Merlot, Lemberger (Blaufränkisch), Trollinger (Schiava Grossa), Syrah, Regent and Cabertin, as well as the white wine varieties Chardonnay, Riesling and Pinot Gris. The vineyards are cultivated in a near-natural way, completely avoiding artificial fertilisers and conventional pesticides. The vineyards have been cultivated according to the guidelines of organic viticulture since the late 1980s.
Only physiologically ripe and healthy grapes are harvested by hand, grape by grape. Traditional mash fermentation is followed by gentle pressing. Depending on the vintage, grape variety and single vineyard, suitable barrels are selected from a variety of different types of wood and degrees of toasting. The red wines mature for two years in French barriques. There is no filtration. Only after the single-varietal maturation is the blend of the cuvées labelled BERYLL, SAPHIR and GRANAT, which is only produced in special years and matured exclusively in new barriques, carried out. The "d'r Oifache", which corresponds to its name and has a high proportion of Trollinger, is bottled in litre bottles. The white wines also mature for 12 months in barrique and tonneau barrels.
