The winery is located in the municipality of Breisach am Rhein (Kaiserstuhl area) in the German wine-growing region of Baden. It was founded in 2016 by Tomislav Marković. The first vineyard was acquired in 2019 and planted with Sauvignon Blanc vines from the Loire. In 2021, Touriga Naciona vines with special drought-tolerant rootstocks, presumably planted for the first time in Germany, followed. The vineyards comprise 0.5 hectares of self-owned vines (Baden); grapes are purchased from a further 0.5 hectares (Rheinhessen). The vineyards are located in the single vineyard sites Teufelsburg (Kiechlingsbergen), Eckberg (Bötzingen) and Käsleberg (Oberrotweil) in the Baden wine-growing region, as well as Goldenes Horn and Heerkretz (Siefersheim) in the Rheinhessen wine-growing region. The white wine varieties Chardonnay, Sauvignon Blanc and Riesling, as well as the red wine varieties Pinot Noir and Touriga Nacional are processed. The vineyards are cultivated mainly by hand according to the rules of biodynamic viticulture (not certified). Special emphasis is placed on strengthening biodiversity, soil fertility and low yields.
Quality is differentiated according to location, age of the vines and yield reduction. The wines are vinified and marketed separately for each plot. Cellar work is carried out according to the non-invasive principle of "as much as necessary, as little as possible". Gravity is used for transport and pumping is avoided as much as possible. After spontaneous fermentation with the vineyard's and cellar's own yeasts and cloudy racking, the white wines in particular are stored for a long time on the fine yeast. The wines are aged in barrique or tonneau barrels, usually for 18 months. The wines are bottled without filtration and fining (in the case of dry wines with BSA) or additives other than low sulphurisation. The assemblage before bottling is done in stainless steel. In the future, ceramic or clay containers are also planned for ageing.
The premium wines of the house are the two red wines Pinot Noir "On the Rocks" - From Volcanic Soil (open mash fermentation with whole grape content, spontaneously fermented and foot tamped, unfiltered, no fining, no pumping) and Pinot Noir "Parabole" - Old Vines - From Loess Loam Soil over Volcanic Rocks (vinified in the same way as "On the Rocks", (vinified in the same way as "On the Rocks", but with 100% whole pigeon and lower yield) as well as the white wine Sauvignon Blanc "Siefersheimer Heerkretz" - From Porphyry (spontaneous fermentation in Slavonian oak, rather oxidative ageing with a long 18-month period lees ageing, no fining, if possible no filtration). The offer of long matured noble brandies is planned.
