Tart and firm, slightly yeasty, fine vegetal and delicately smoky nose with pomaceous fruit notes, a hint of stone fruit and citrus fruit, some pak choi, a hint of maritime breeze and nutty and mineral notes. Polished, cool, tart, finely juicy fruit, fresh vegetal notes, again clearly reminiscent of pak choi, lively acidity, delicately smoky and yeasty nuances, some grip, persistent on the palate, a little white pepper, brown butter, peach skin and sesame in the background, clear minerality, a hint of protein, very good, tart finish with grip.
