The winery is located in the municipality of Eußenheim (Maindreieck area) in the German wine-growing region of
Franconia. Werner Höfling began marketing the wines himself in 1988. A new cellar was put into operation in 2004. Since 2009, the winery has been managed by Klaus Höfling. The vineyards cover 14 hectares in the single vineyard sites First (Eußenheim),
Stein (Stetten), Homburg (Gössenheim) and Kalbenstein (Gambach). They are planted with the white wine varieties Silvaner, Müller-Thurgau, Bacchus, Pinot Blanc, Riesling, Kerner, Gewürztraminer, Scheurebe, Solaris and Sauvignon Blanc, as well as with the red wine varieties Pinot Noir, Domina, Frühburgunder and Regent. The individual plots are cultivated individually in a
sustainable manner
The white wines are partly fermented
spontaneously, the red wines go through the classic
mash fermentation. Premium wines are Domina Stettener Stein (11 months in barrique), the white wine cuvée H Spätlese (Silvaner, Pinot Blanc, Riesling, Gewürztraminer) and the bottle-fermented sparkling wine Pinot brut (Pinot Blanc, Pinot Noir Blanc de noirs, three years fine yeast storage). In years with suitable weather conditions,
ice wine is also produced. Around 100,000 bottles of wine are produced annually. Grape Pearls (non-alcoholic), brandies and
wine jelly are also produced. The winery is a member of the Franconian Winegrowers' Association and the Fränkisches Gewächs Association
