The winery is located in the municipality of Großwallstadt (Churfranken area) in the German wine-growing region of Franconia. In 1992, the family business with 2.5 hectares of vineyards at the time was taken over by Klaus Giegerich and converted into a pure winegrowing operation. After training as a viticultural technician, son Kilian joined the business in 2012, followed by his brother Philipp in 2020. The family business has been run jointly by the two sons since January 2021, with father Klaus continuing to provide advice and support. The vineyards cover 15 hectares of vineyards in the single vineyard sites Lützeltalerberg and the Gewann Pitztaler Berg (Großwallstadt), Schalk (Rück), Campestres (Wörth am Main), and Schlossberg (Klingenberg am Main). Burgundy varieties play a special role, above all the red wine varieties Frühburgunder and Spätburgunder, followed by the white wine varieties Weißburgunder (Pinot Blanc) and Chardonnay with a total of 40% area share. Others are Müller-Thurgau and Silvaner, as well as Sauvignon Blanc, Muskateller and Riesling. Since August 2020, the winery has been in the certification process for organic-ecological viticulture.
Around 95% of the grapes are harvested by selective hand-picking (the red Burgundy varieties in small hand-picking boxes). The product range is divided into three lines: estate wines, local wines and site wines. Fermentation is spontaneous for red wines and white wines from local wine upwards. The estate wines are predominantly matured in stainless steel tanks, the local and site wines in large barrels (Silvaner), in barrique barrels (Burgundy) or in concrete eggs (Silvaner -Alte-Reben-). The premium wines represent the diversity and variety of the vineyards. These are the three site wines SCHALK Silvaner, PITZTALER BERG Spätburgunder, as well as the "flagship" SCHLOSSBERG Spätburgunder. A Blanc de Noir is also produced, as well as sparkling wines and vintner's spark ling wines. Senior boss Klaus Giegerich runs the estate's own distillery. Around 100,000 bottles of wine are produced annually. The winery is a member of the Frank & Frei and Vinissima winegrowers' associations.
