The winery is located in the municipality of Jetzelsdorf near Haugsdorf in the north-west of the Lower Austrian wine-growing region of Weinviertel. The foundation stone was laid by Hans Bauer senior in 1935 and the business was expanded by his son Hans Bauer junior. Since the beginning of 2008, the business has been run by the third generation of the family, Christoph Bauer and his wife Heidi, after graduating from the winegrowing school Klosterneuburg, internships in South Tyrol, South Africa and Australia, and work at the wine trade WEIN & CO. The innovative company was a pioneer in many areas. In 1993, the first single-varietal Zweigelt aged in barrique was bottled in the village. This was followed in 1997 by "Vintage", one of the first Austrian port-style wines. Finally, in 2004, the first plant with minimum pruning was introduced in the Pulkautal.
The vineyards cover 20 hectares of vines in the Alte Haide, Bergsatz, Felderbergen, Galgenberg, Gerichtsberg, Haidsatzen, Hofweingarten, Straßhaide and Znaimer Haide vineyards on sand, clay and loess soils with a relatively high lime content. The white wine varieties Grüner Veltliner, Rivaner (Müller-Thurgau), Welschriesling, Neuburger, Pinot Gris and Sauvignon Bl anc make up 40% of the vineyards, and the red wine varieties Blauer Portugieser, Zweigelt, Blauburger, Cabernet Sauvignon, Merlot and Pinot Noir make up 60%. The leading variety Grüner Veltliner is especially cultivated with constant propagation of the best vines. Certified organic viticulture with the production of organic wines has been practised since 2015.
The wines are vinified according to variety and vintage. Traditionally, the best red wines are fermented in open vats with manual immersion. Depending on the type of wine, ageing takes place in stainless steel tanks, in traditional large wooden bar rels or in barriques. No filtration is used until bottling. The premium wines include Weinviertel DAC (Grüner Veltliner), Grüner Veltliner Z'raft, and the red wines Zweigelt Reserve, Pinot Noir Gerichtsberg and Cabernet Merlot, which are aged in barriques. False sparkling wine, frizzante (sparkling wine) and wine chocolate are also produced. The winery is a member of Weingüter Retzer Land.
