The winery is located in the municipality of Ingelheim ( Bingen area) in the German wine-growing region of Rheinhessen. It is managed by Simone Adams. The vineyards cover 10 hectares of vines in the single vineyard sites Horn and Pares (Ingelheim) with the vineyards Auf dem Haun, Heerweg and Lohpfad. The white wine varieties Chardonnay,Pinot Blanc and Pinot Gris as well as the red wine variety Pinot Noir are cultivated.
Since 2020, the vineyards have been cultivated according to the principles of biodynamic and regenerative viticulture. In many plots, the tips of the shoots are manually braided instead of being topped with a leaf cutter. This limits growth without injury or shock. All grapes are harvested by hand.
The wines are vinified according to the site. The product range is divided into the "Ingelheim" and "Lagen" lines. The wines are generally fermented spontaneously, with the red wines undergoing partial or complete mash fermentation without destemming (with the grape skins). They are matured for a long time on the lees, preferably in large wooden barrels, but also in barriques. No fining or stabilisation is carried out and as little sulphur as possible is used. All wines are bottled without filtration. Premium wines are "Chardonnay Auf dem Haun" and "Pinot Noir Pares". A bottle-fermented sparkling wine "Ingelheim Brut nature"(dosage zéro) is also produced.
