About AdamsWein

The winery is situated in the municipality of Ingelheim ( Bingen area) in the German wine-growing region of Rheinhessen. It is run by Simone Adams, who holds a PhD in oenology.  The estate’s motto is:‘The beauty and vitality of our vineyards should be evident in the flavour of all Adams wines.’

Vineyards & Grape Varieties

The vineyards cover 10 hectares of vineyard area in the single-vineyard sites of Horn and Pares (Ingelheim), comprising the plots Auf dem Haun, Heerweg and Lohpfad. The white grape varieties cultivated are Chardonnay,Pinot Blanc and Pinot Gris, as well as the red grape variety Pinot Noir.

Cultivation

Since 2020, the vineyards have been managed according to the principles of biodynamic and regenerative viticulture. In many plots, the shoot tips are woven in by hand rather than being topped with a leaf trimmer. This limits growth without causing injury or stress to the vines. All grapes are harvested by hand.

Winemaking

Wine-making follows the principle of minimising intervention in the cellar (as much as necessary, as little as possible). Interference with the natural processes of winemaking is kept to a minimum. The wines are vinified in a style typical of their specific vineyard sites. The product range is divided into the ‘Ingelheim’ and ‘Lagen’ lines.

The wines are generally fermented spontaneously; for the red wines, maceration takes place partly or entirely without destemming, i.e. with the grape stems intact. They are left to rest on the lees for a long time, and ageing takes place primarily in large wooden casks, but also in barriques. No fining or stabilisation is carried out, and as little sulphur as possible is used. All wines are bottled without filtration.

Product range

’s premium winespremium wines are the white wine ‘Chardonnay Auf dem Haun’ and the red wine ‘Spätburgunder Pares’. A bottle-fermented sparkling wine, ‘Ingelheim Brut nature’ ( dosage zéro),is also produced.
