Description to Bourgogne Passetoutgrain AOC

Regional appellation for exclusively red and rosé wines in French Burgundy. The vineyards cover some 430 hectares of vines on calcareous soils in the departments of Côte d'Or (91 communes), Rhône (85), Sâone-et-Loire (154) and Yonne (54). The wines so designated have a very old tradition. The authorised grape varieties Pinot Noir or the clone Pinot Liébault with at least a third of the proportion and Gamay must grow together on the same plot. They are harvested and processed together (like mixed set). This is also the meaning of Passe-Tout-Grain. The rosé wines must be produced using the Saignée method(racking after short maceration).
