Quite deep, firm, slightly yeasty and nutty aroma with fine vegetal and yellow fruity aromas, a hint of fish sauce, sesame and soy, floral nuances and minerality. Tart, cool, restrained fruit, smoky, nutty and fine vegetal flavours, also still some yeast on the palate, mace and green Thai asparagus, very fine acidity and grip, persistent, mushroomy in the background, chalky minerality, also mussels, elegant style, also has lightness despite its complexity, very good, tart, firm finish, again with cool juice.
