Relatively cool, somewhat vegetal to herbaceous and a hint of light floral pomaceous fruit on the nose, with nuances reminiscent of pears, nutmeg and bacon. Cool, clear, tart fruit with a noticeable acid bite, light carbonic acid, a hint of fennel, citrus zest and dark berries, also mussel shells, light wood notes in the background, clear grip of crumbly shell tannin, some persistence, clearly salty, very good, tart-juicy finish with bite.
