The family business is located in the hamlet of Girlan in the municipality of Eppan (Cornaiano) near Bolzano in the Italian wine-growing area of South Tyrol ( Trentino-Alto Adige region). Helmuth Winkler was one of the first people in South Tyrol to found a sparkling wine cellar in 1977, which he ran successfully until 2001. In that year, the sparkling wine cellar was closed due to illness. In 2017, his son Michael Winkler and his wife Verena revived the former "Winkler sparkling wine cellar" as "Sektmanufaktur Winkler". The "Manufaktur" part of the name refers to the production methods, as everything from thinning the leaves, harvesting the grapes, remuage on the vibrating console and labelling the bottles to packaging and delivery is done by hand.
There are currently two products. The "LAMM N°12 Extra Brut" is made from 70% Chardonnay, 20%Pinot Noir and 10%Pinot Blanc, while the "ANNA-KATHARINA N°15 Extra Brut" rosé is made from 65% Pinot Noir and 35% Chardonnay. Both are bottled in a special, pot-bellied bottle shape. Lamm N°12 is also the address of the company's own sparkling wine lounge in Girlan. Every year, 20,000 to 25,000 bottles of sparkling wine are produced.
