The winery is located in the municipality of Wachenheim (Mittelhaardt-Deutsche Weinstraße area) in the German wine-growing region of Pfalz. Founded by Emil Zimmermann after the Second World War, the estate was taken over by his son Jürgen Zimmermann in 1996. The vineyards cover ten hectares of vines in the single vineyard sites Fuchsmantel, Gerümpel, Königswingert, Luginsland and Schlossberg in Wachenheim. Two thirds of them are planted with Riesling, as well as the other white wine varieties Pinot Blanc,Pinot Gris, Chardonnay, Scheurebe, Müller-Thurgau, Silvaner, Gewürztraminer and Sauvignon Blanc, and 10% with the red wine varieties Pinot Noir, Blauer Portugieser, Merlot and Cabernet Sauvignon. After four to eight weeks of controlled fermentation, the wines are matured partly in stainless steel tanks and partly in traditional large wooden barrels. The aim is to produce a rather slender, elegant and finesse-rich Riesling with a piquant acidity. Increasingly, spontaneous fermentation with the vineyard's own yeasts is being carried out and promoted. Around 80% of the wines are vinified dry.
