The Jost family has been growing grapes for almost two centuries. The vineyards cover a total of 12 hectares in two German wine-growing regions. In both, the winery is a member of the VDP (Association of German Prädikat Wine Estates). The current owner in the fifth family generation is Dipl. Ing. Peter Jost, who took over the business from his father Toni in 1975. In his honour, the tradition of naming the winery after the current owner was broken. The main winery is located in the municipality of Bacharach in the Mittelrhein wine-growing region. The vineyards cover eight hectares. The Hahn vineyard, with 4.5 hectares, is almost entirely owned by the estate, from which the name "Hahnenhof" is derived

The vineyards in the Rheingau comprise 3.5 hectares of vines in the Walkenberg site (Walluf). The winery there was founded as a mixed agricultural business with viticulture, fruit growing and a mill. It came into the possession of the Jost family in 1953 through inheritance. The wines are vinified in Bacharach. The vineyards are planted with 80% Riesling, as well as Pinot Noir (15%), Pinot Blanc and Dunkelfelder. The vineyards are cultivated according to ecological principles with targeted humus management, promotion of beneficial insects and no use of insecticides against animal pests. There is a late harvest and selective harvesting in several passes per vineyard. Fermentation takes place slowly at low temperatures. Depending on their suitability, the wines are matured in steel tanks or in wooden barrels; the best Pinot Noirs are aged for 12 to 15 months in barriques. The wines from the Hahn and Walkenberg sites are marketed as Grosses Gewächs. Bottle-fermented sparkling wine is also produced
