Firm, deep and multi-layered, clearly vegetal scent with reserved, quite noble yellow fruity aromas, hints of smoke, fine mushroom tones, a little herbs, floral traces and minerality. Ripe, dense, somewhat warm fruit with almost a little sweetish juice, clearly vegetal aromas reminiscent of pointed cabbage and pak choi, nutty tones, with air increasingly also smoke and wood, persistent on the palate, good depth, mushrooms in the background, almost still compact structure, bacony nuances, chalky and salty minerality, very good, firm, grippy finish with melting, juice and tart spiciness. Must mature.
