Tart and firm, clearly vegetal, reminiscent of root vegetables with very restrained, bright yellow fruity aromas as well as nutty, hints of peppery and floral traces. Restrained, tart, very firm, a hint of warm and melting fruit, nutty tones and again some root vegetables, yeasty nuances, a hint of floral, hints of yellow spice and green bacon, chalky-salty minerality, delicate smoky nuances, hints of wood, still young, good depth, gets tighter and finer with air, very good finish with salt and a hint of fennel. Should mature a little more.
