The Sabine and Fred Prinz winery is located in the municipality of Hallgarten in the German
wine-growing region of
Rheingau. After starting with 1.5 hectares, today the vineyards cover almost six hectares of vines in the Hallgarten sites
Hendelberg and
Jungfer, as well as
Schönhell with the
cadastral site Frühernberg (Hallgarten). They are 90% planted with Riesling and some Pinot Noir.
Organic viticulture is practiced according to the guidelines of
ECOVIN. This includes
cover crop by seeding and
composting of the soil with a large part renunciation of mineral
fertilizers. The grapes, which are reduced in yield through vigorous pruning and
thinning out, are selectively harvested in several passes in order to process only ripe and healthy grapes
After
pressing of the whole grapes, a slow, cooled fermentation follows. The wines are vinified with a fruity emphasis and are characteristic of the vineyard. The white wines are vinified in steel tanks. The best dry Rieslings from the VDP-classified Grossen Lagen are marketed as
Grosses Gewächs marketed. The Spätburgunder red wines are produced in the classic manner by means of open
mash fermentation in vats, storage in half-barrels or barrique barrels with varying degrees of storage, and bottling no earlier than ten months after the harvest. Around 45,000 bottles of wine are produced annually. The winery has been a member of the
VDP (Association of German Prädikat Wine Estates) since 2005
