The winery is located in the municipality of Appenheim ( Bingen area) in the German wine-growing region of Rheinhessen. The traditional family has been growing grapes since the end of the 19th century. The foundation stone was laid by the grandparents Erwin and Magdalena Knewitz when they moved to the present location. In 1976, wine was bottled for the first time under the management of Gerold Knewitz. After studying oenology in Geisenheim and a number of practical training periods, Tobias Knewitz, the third generation of the Knewitz family, has been running the winery since 2009 with a focus on natural viticulture. He is supported by his partner Corina Knorr and brother Björn. The saying coined by the French writer Colette (1873-1954) is considered the guiding principle of the house: Only wine allows man to understand the taste of the earth.
The vineyards cover 25 hectares of vineyards in the single vineyard sites Eselspfad and Hundertgulden (Appenheim), Goldberg and St. Laurenzikapelle (Gau-Algesheim), Steinacker (Nieder-Hilbersheim) and Schlossberg (Ingelheim). Despite all the differences and individuality of the vineyards, they are optimally suited for the leading variety Riesling due to the high proportion of limestone they have in common. They are planted with the white wine varieties Riesling, Silvaner, Sauvignon Bl anc,Pinot Blanc and Chardonnay, as well as the red wine variety Pinot Noir. The vineyards are cultivated in an environmentally friendly and natural way.
During vinification, great importance is attached to the typicity of origin, terroir and variety. After a selective hand harvest, the grapes are partly pressed whole. Fermentation takes place spontaneously with the grape's own yeasts. Depending on the type of wine, the wines are fermented and matured in stainless steel tanks, in traditional large wooden bar rels or in barriques. They are marketed in the lines estate wines (entry-level wines), local wines (local and terroir character) and site wines (from old vines in the core of the top sites). The premium wines are Riesling Hundertgulden and Chardonny Réserve. A bottle-fermented sparkling wine is also produced. Around 150,000 bottles of wine are produced annually. The winery is a member of the Maxime Herkunft Rheinhessen association.
