The winery with full name "Szent Tamás Szőlőbirtok és Pincészet" is located in the village of Mád in the Tokaj-Hegyalja region(Hungary). It was founded in 2009 by a group of owners. Responsible for the operation are István Szepsy jr. and István Balassa. The vineyards comprise 25 hectares of vines owned by the company in the Betsek, Birsalmás, Király, Nyulásszó, Percze and the eponymous Szent Tamás sites on volcanic soil with yellow and red clay. In addition, large quantities of grapes are also purchased, which serve for the quality class "local wines". In this respect, an expansion to up to 300 hectares of vineyards of contract winegrowers is planned. The varieties Furmint, Hárslevelű and Muskotály (Muscat Blanc) are cultivated and processed

The grapes, which have been reduced in yield to varying degrees depending on the type of wine, are harvested by hand in small crates when physiologically ripe, destemmed and pressed pneumatically. The fermentation takes place spontaneously with wild yeasts in steel tanks with subsequent flotation. There is no biological acid decomposition. The various local wines with the brand name "Mád" are aged in steel tanks. The site wines come exclusively from the winery's own vineyards and mature in 500-litre wooden barrels made of Hungarian oak. Among the premium wines are "Szent Tamás Furmint" and "Percze Furmint", which both mature for six months in wooden barrels on the and are bottled after another month in steel tanks and final filtration, as well as a "6 Puttonyos Tokaj Aszú". Various fine brandies are also produced.
