The winery is located in the municipality of
San Martino della Battaglia, four kilometres from Lake Garda in the Italian region of
Lombardy. It originates from a farm called Hirundo, founded in 1908. The current name is derived from the numerous swallows nesting here (Selva), as well as the hooded vineyards (Capuzza = hood, hood). Attached to the winery are holiday apartments, a courtyard restaurant and a country house (Cascina), converted in 1983 for wine events. The farm is run by the fourth generation of the family, Luca Formentini is responsible for the wine production and Fabio for the farm restaurant
The vineyards cover 30 hectares of vineyards planted with the red varieties
Barbera,
Groppello,
Marzemino and
Sangiovese, and the white varieties Friulano
(Sauvignonasse) and Turbiana
(Verdicchio Bianco). The cultivation is carried out according to
ecological guidelines. Special attention is paid to an optimal balance between grapes and foliage. Artificial
irrigation is only rarely used. Harvesting usually begins in mid-August and lasts until October with long pauses in order to achieve the best ripeness of the various grapes. The product range includes the DOC wines
Garda,
Lugana and
San Martino della Battaglia. Furthermore, sparkling wines are also produced according to the Metodo Martinotti
(Méthode charmat) and Metodo Classico (bottle fermentation).
Grappa and olive oil are also produced.
