BECOME A BUSINESS PREMIUM MEMBERThe micro-winery is located in the municipality of Ihringen ( Kaiserstuhl area) in the German wine-growing region of Baden. Originally from Sicily, Roberto Raspini studied oenology and viticulture and gained experience in Sicily, Campania and Andalusia before settling in the Kaiserstuhl and founding the winery in 2021.
The vineyards cover just over one hectare of vines in the single vineyard sites Eckartsberg (Breisach), Fohrenberg (Ihringen) and Käsleberg (Oberrotweil). They are planted with the Pinot Blanc, Pinot Gris and Pinot Noir varieties. The vineyards are cultivated in a natural way and with respect for plants, animals and the soil. This includes the complete avoidance of pesticides. As a quality-enhancing measure, yields are reduced to a maximum of 30 to 50 kg/ar with the aim of producing wines that are intensively typical of the terroir.
All work in the vineyard and cellar is carried out exclusively by hand according to minimalist, non-invasive principles in a gentle manner, true to the motto "As much as necessary, as little as possible". The musts and wines are transported and moved exclusively by natural gravity without any mechanical intervention. The grapes, which are harvested selectively by hand, are stomped or crushed with the feet in the traditional way (see picture above right).
The wines are fermented spontaneously with the vineyard's own yeasts and mature predominantly in used barrique barrels in order to obtain a fine, subtle woody flavour. Large wooden barrels and amphorae are also used. The wines produced as Landwein(PGI) are bottled without filtration or fining. The premium wines are the Pinot Blanc, the Trilogie (a sparkling Pétillant Naturel from the pre-selection of all plots) and the Pinot Gris Ambrato (an orange wine from the single vineyard of Eckartsberg Breisach).
