The regional appellation applies to Crémant (sparkling wine made according to the Champagne method), which is produced from traditional grape varieties in Burgundy. It replaced the old name "Bourgogne Mousseux". The main varieties used are the white Chardonnay, Pinot Blanc, Pinot Gris and Aligoté as well as the red Pinot Noir and Gamay. Mainly white and to a lesser extent rosé wines are used. The main supplier of the basic wines is the Rully appellation. See also under Bourgogne and Burgundy Classification.
