The Gál Tibor winery is located in the north of Hungary, in the baroque city centre of Eger. It was founded in 1993 by winemaker Tibor Gál (1958-2005). In addition to building up the winery in Eger, he achieved great fame in Tuscany, where he ran the famous Ornellaia winery for a decade. He also received great recognition for his work in the Italian regions of Friuli and Piedmont as well as in South Africa. Tibor Gál was therefore called the "flying Hungarian wine wizard". He died in a car accident in February 2005. Since 2005, the winery has been run by his son Tibor Gál Jr. and his family. The focus of their work is an Egri Bikavér Cuvée (Eger Bull's Blood) of a new style and a classification of the sites in the vineyards of the Eger area via the Egri Bikavér. Exciting experiments are taking place in this regard in the Síkhegy, Pajados and Nagy-Eged sites. In 2014, a multifunctional complex for wine tastings was opened in the centre of the baroque town on an area of 1,400 m², which also includes a 500-year-old tuff cellar labyrinth.
A total of 60 hectares of vineyards are cultivated, 35 hectares of which are in the Síkhegy, Afrika Pajados, Tornyos and Nagy-Eged sites. A large part of the terroir consists of Miocene rhyolite tuff, as well as partly limestone soils. These were planted with the most suitable grape varieties after extensive analyses taking into account climate, rainfall, sun exposure (exposition), number of hours of sunshine and soil type. In 2021, the organic conversion of the winery began. The red wine varieties Kékfrankos (Blaufränkisch), Cabernet Franc, Cabernet Sauvignon, Kadarka, Merlot, Pinot Noir and Syrah are cultivated to 70%, all of which are suitable for blending Egri Bikavér. The white wine varieties with a 30% share are Sauvignon Blanc, Pinot Blanc, Szürkebarát (Pinot Gris), Tramini (Gewürztraminer) and Viognier.
An individual circular bottle label designed over 20 years ago adorns the winery's wine bottles. It symbolically represents the 200-kilometre-long labyrinth of cellars under the city of Eger and is also intended to address the many mysterious stories and possibilities of viticulture and winemaking. According to the philosophy of the house, they refer to the constant striving to create a special wine. This is expressed by the motto "Viticulture is like a labyrinth, we never leave it where we entered it". The red wines for Egri Bikavér are fermented spontaneously in wooden vats and then aged for 14 months in one, two or three year old 500 litre wooden barrels. Bottling is done without clarification and without filtration. The winery's premium wines include the Egri Bikavér Superior, the Síkhegy Terroir Bikavér and the Pajados Terroir Bikavér.
