The winery is located in the municipality of Bad Krozingen-Schlatt (Markgräflerland area) in the German wine-growing region of Baden. In the agriculturally oriented business, viticulture has also been practised for generations. After training as a chef and gaining practical experience in France, Martin Waßmer decided to produce wine himself in 1998. In 2016, a new wine press and cellar building was put into operation. The vineyards cover 35 hectares of vines in the single vineyard sites, Schlossberg (Staufen), Castellberg (Ballrechten-Dottingen), Maltesergarten (Schlatt), Schlossberg (Staufen), Schlossberg (Achkarren), Ölberg (Ehrenstetten), Altenberg (Laufen), Steingrüble (Bad Krozingen), Roter Bur (Glottertal), and Letten and Schäf (Auggen).
They are planted with the red wine varieties Pinot Noir from Burgundy clones, the farm's main variety with 60% of the area, Syrah, Merlot and Cabernet Sauvignon, as well as with the white wine varieties Pinot Blanc, Pinot Gris,Chasselas, Chardonnay, Müller-Thurgau, Sauvignon Bl anc, Riesling, Muscat and Gewürztraminer. Some of the vineyards are 40 years old and older and are planted very densely with 10,000 to 12,000 vines per hectare on steep slopes. The vineyards are cultivated using environmentally friendly, natural methods. Quality criteria are consistent yield reduction with an average of 40 hl/ha and completely healthy, physiologically ripe grapes through selective manual harvesting.
The winery is committed to the Burgundian style. The product range is divided into the lines estate wines, selection wines and the site wines known as "GC" with an average maximum yield of 20 to 25 hl/ha. The wines are all fermented spontaneously with the vineyard's own yeasts. The white wines aged in stainless steel are kept on the fine le es for a particularly long time. The red wines are macerated in open vats and mature in traditional large wooden barrels, the top qualities in Burgundian barrique barrels for up to 18 months and are bottled without filtration as far as possible. Bottle-fermented sparkling wines are also produced. Around 190,000 bottles of wine are produced annually.
