The winery is located in the community of Neustadt-Hambach (Mittelhaardt/Deutsche Weinstraße area) in the German Palatinate
wine growing region. In old times it was a tithe cellar
(Oberzehntkeller), since 1796 it has been in family ownership. Today it is managed by Eva and Ralf Bonnet, the seventh generation of the family, supported by the seniors Volker and Gerda Bonnet. The vineyards cover 14 hectares of vineyards in the individual locations Römerbrunnen and Schlossberg (Hambach). They are planted with the white wine varieties Riesling (35% of the area), Silvaner, Kerner, Scheurebe, Chardonnay, Pinot Blanc, Pinot Gris, Rieslaner and Gewürztraminer, as well as the red wine varieties Pinot Noir, Domina, Cabernet Sauvignon, Merlot and Dornfelder. Furthermore, grapes from friendly winegrowers from selected sites are also purchased
After a temperature-controlled, restrained fermentation, depending on the type of wine, the ageing takes place in stainless steel, in large wooden barrels or 9 to 24 months in barriques with possibly longer yeast storage of the young wines. Bottle-fermented sparkling wines are also produced. Since the 2008 vintage, the wines of the closely related "Alfred Bonnet" winery from Friedelsheim are also vinified in the Hambach winery.
