The winery is located near the city of Zaragoza in the DO area Cariñena in the Spanish region of Aragon. It was founded in the 1980s by the Ramón Reula family under the name "Finca Ayles". It united a number of plots of land which, in the Middle Ages, were part of a 3,300 hectare agricultural estate. In the past, the wines were produced under different labels: Finca Ayles, Bodegas Aylés and Señorío de Aylés. In 2010, the fully owned Ayles vineyard was classified as Vino de Pago (highest Spanish wine quality level, Grand Cru by sense) and therefore the name of the winery was changed. A new winery building was inaugurated in 2000. Inmaculada Ramón Reula of the family is responsible for the production and Ana Ramón Reula for the quality management.
The vineyards cover 100 hectares of vineyards (47 hectares of which are Pago Aylés) on soils interspersed with clay, limestone and chalk in the valley of the Ebro tributary Huerva. The area is part of a large nature reserve for birds defined by the EU. The red wine varieties Tempranillo, Garnacha Tinta, Cabernet Sauvignon, Merlot and Syrah, as well as the white wine variety Chardonnay are cultivated. The cultivation is carried out according to ecological, sustainable criteria. The yields are limited to 34 hl/ha. The barrel cellar comprises around 500 mostly French . The entry line is marketed under "Aldeya". The Pago wines are called "a" (Joven), "y" (Cuvée), "l" (Rosé), "é" (100% Tempranillo) and "s" (100% Garnacha Tinta"). The unusual names result in "Aylés". There is also the wine "3" (Cuvée). The name "3 de 3.000 - Tres Mil" (3 out of 3.000) means that the wine comes from the best three hectares of the estate, which in the Middle Ages had more than 3.000 hectares.
