The family winery is located in the municipality of Cortina sulla Strada del Vino (Cortina sulla Strada del Vino) in the Italian wine-growing area of Alto Adige ( Trentino-Alto Adige region). It was taken over by Manuel Taddei in 2012 after he graduated from the secondary school for agriculture and is now in its third generation.
The steep vineyards cover six hectares of vines in the Cembra Valley near the Lagorai mountain range. The temperature fluctuations with warm days and cool nights with fresh winds provide excellent conditions for aromatic wines. The white wine varieties Sauvignon Blanc and Müller-Thurgau are cultivated here and two IGT Vigneti delle Dolomiti wines are produced from them. Yields are limited to 7,000 to 8,000 kg/hectare.
The Sàssa vineyard is named after the rocky and stony gorge with the river Avisio, which is around 200 metres deep. The vines for the "SÀSSA SAUVIGNON" grow here on a sloping plateau at 740 metres above sea level.
The vines for the "COSTE MÜLLER-THURGAU" grow in the Coste (or Flanke) Grumes vineyard at just under 900 metres above sea level on porphyry soil with red-coloured clay components.
After being carefully harvested by hand at the end of September/beginning of October, both wines are fermented at a controlled temperature in stainless steel tanks and then matured for six months on the fine lees and six months in the bottle.
