The winery "Don Angel Wines" was founded by the German Engelbert Schmid, who is in charge of cultivation, development and marketing. The production started in 2003 on the Canary Islands, on the island of La Palma. This small winery has now been sold. Since the 2010 vintage, the grapes come from leased land on the Castilian plateau in the northern Spanish region of Castilla y León. In 2019, 25 hectares of new land were purchased in the Ribera del Duero area, which will be planted step by step. The purchase of a further 25 hectares has been initiated. So far, the red wine varieties Cabernet Sauvignon, Tempranillo and partly ancient Garnacha Tintorera(Alicante Henri Bouschet), as well as the white wine varieties Verdejo and Sauvignon Blanc have been cultivated and processed. New plantings are being expanded to include Monastrell and Merlot for the red wine varieties and Albillo Real and Riesling for the white wine varieties.

Only a minimum of plant protection products are used in the care of the vines. This is done exclusively with sulphur preparations, which is possible due to the continuously dry summers. As a rule, a single sulphurization in mid-May before blossoming is sufficient, after which no further treatment is carried out until the harvest. This means that there are no sulphur residues on the grape skin. Only healthy and fully ripe grapes from rigorous hand-selected selection in the vineyard are used for production. The grapes are gently destemmed and lightly squeezed, the mash (for white and rosé the freshly pressed juice) is immediately filled into small tanks, cooled to 0 °Celsius and shipped to Germany as quickly as possible just a few hours after harvesting.

The fermentation and ageing of the wines takes place exclusively in Germany in our own cellar in Mindelzell in the middle of Southern Germany in Bavarian Swabia. The vinification takes place with the help of the most modern laboratory and cellar technology. The red wines are vinified with a typical variety and fruit emphasis. After alcoholic fermentation, the red wines mature separately according to grape variety for 12 months in barrique barrels made of French Allier oak. In order to give the wines only a delicate wood note, only a maximum of one third of the barrels are new. The red wines are produced in three lines. These are "Don Angelo Tintórico" (main wine, blend of grape varieties may vary), "Don Angel Angelayo" (from the very best barrels only in the best vintages) and "Don Angel Bodegano" (house wine). We also produce the rosé wines "Don Angel Rosado", "Don Ángel Rosado Doña", and the sparkling wine "Angel Secco" as well as the two white wines "Don Angel Blanco" and "Don Angel Blanco Doña".
