The Valle d'Itria is known as the "Valley of the Trulli", the name of the traditional round houses. Grape varieties permitted in the region may be used. Varietal wines must contain at least 85% of the variety in question. Dual varietal wines must be blended from 50 to 85% of the main grape variety, plus 15 to 50% of other grape varieties.
