Description to Trento DOC
DOC zone for bottle-fermented spumante(sparkling wine) in the Italian area of Trentino. The zone comprises selected sites of 60 municipalities in the province of Trento. The mostly terraced hillside and steep vineyards from Vallagarina (Lagertal) to Valle di Cembra (Zimmerstal) with calcareous soils are optimally oriented towards the south and exposed to strong fluctuations between day and night temperatures. This has a very positive effect on the acid formation in the base wines, which is important for sparkling wines. The wine types Bianco and Rosato are vinified in any blend or use of the varieties Chardonnay and/or Pinot Bianco (Pinot Blanc) and/or Pinot Nero (Pinot Noir) and/or Meunier (Pinot Meunier). As one of the few DOC/DOCG areas, the metodo classico, i.e. bottle fermentation, is mandatory here. The sparkling wines must undergo at least 15 months of yeast ageing (su lieviti), the vintage sparkling wines (Annata or Millesimato) must mature for 24 months. With 36 months of yeast ageing and at least 12% alcohol by volume, the Bianco may also call itself Riserva. Since 2003, the sparkling wines have been called Talento to distinguish themselves from the sometimes negative image of a Spumante.
