The vineyards cover around 2,300 hectares of vineyards on the Mediterranean coast at an altitude of up to 450 metres above sea level. The different soils with over 20 types consist of alluvium, dolomite, limestone, gypsum and marl. The area is divided geographically, consisting of the two zones of Fitou Maritime, ten kilometres apart, with the five communes of Caves, Fitou, La Palme, Leucate and Treilles, and Fitou de Hautes-Corbières with the four communes of Cascastel, Durban, Tuchan and Villeneuve-les-Corbières.

The red wine is blended from at least 70% of the main varieties Carignan Noir(Mazuelo) and Grenache Noir(Garnacha Tinta), and possibly Mourvèdre(Monastrell) and Syrah(Cinsaut is no longer permitted and Lladoner Pelut may not be replanted). Well known producers are Domaine Bertrand-Bergé, Château de Nouvelles, Domaine Lérys, Domaine Rolland, Mas des Caprices and CV Val d'Orbieu.
