The Spanish DO area is located in the political region of Valencia in the Levant and is named after two cities in the centre of the area. Extreme climatic conditions prevail. In the hot summers there are temperatures up to 40 °C, in the cold winters up to minus 15 °C. The vineyards at 600 to 1,000 meters above sea level cover about 40,000 hectares. 32,000 of these alone are occupied by the red variety Bobal, which is traditionally grown in bush form. Most of them are over 50 and even up to 100 years old. Accordingly, the yields are very low, resulting in red wines rich in tannins and extracts. Other red varieties are Tempranillo with about 10%, followed by Garnacha Tinta, Cabernet Sauvignon, Merlot and Syrah. The white wine varieties account for only 5%, these are Macabeo, Planta Nova, Merseguera, Sauvignon Blanc and Chardonnay
There are four areas classified as Vino de Pago: Finca Terrerazo, Pago de Chozas Carrascal, Pago de Los Balagueses and Vera de Estenas. For the main variety Bobal there is a special level "Bobal Clásico". These red wines must come from vines over 50 years old and may have a maximum yield of 3,000 kilograms/hectare. Furthermore, artificial irrigation is not permitted for these vineyards. A speciality is the Doble Pasta, a dark-coloured red wine rich in extracts, produced according to a special process. There is a special regulation according to which the wines may be blended with wines from the DO area of Valencia to the east (and vice versa).
