Description to Côtes du Roussillon-Villages Caramany AOC
Sub-appellation of Côtes du Roussillon-Villages (see under Côtes du Roussillon) in the Roussillon region of southern France, named after the municipality. As a special regulation, for the red wine at least 60% of the grapes, but the entire share of Carignan Noir (Mazuelo), which may be a maximum of 60%, must be fermented by means of carbonic maceration (carbonic acid maceration). The reason for this peculiar regulation is that the local cooperative Caramany was the first producer in France to use this technique in 1964.
