Subappellation of Côtes du Roussillon-Villages in the Roussillon region of southern France named after the municipality. The full name is Côtes du Roussillon-Villages Caramany. As a special rule, at least 60% of the grapes for the red wine, but the entire Carignan content (which may not exceed 60%) must be fermented using macération carbonique (carbonic maceration). The reason for this peculiar rule is that the local cooperative Caramany was the first producer in France to use this technique in 1964.
