Wolfgang Pfaffmann and his wife Susanne. According to the philosophy of the house, we see ourselves as a craftsman's business that wants to convince with individuality and not with mass. Through careful care of the vineyard and (if possible) manual harvesting the grapes are selected. One believes in and lives by the motto "Quality comes from the vineyard and can only be accompanied in the cellar"
The vineyards comprise almost ten hectares of vineyards in the individual locations Herrenberg, Kaiserberg and Kirchenstück (Nußdorf). They are planted with the red wine varieties Frühburgunder, Spätburgunder and Cabernet Sauvignon as well as the white wine varieties Riesling, Sauvignon Blanc, Weißburgunder, Grauburgunder and Muskateller. Only healthy grape material is processed through selective manual harvesting. The vinification takes place in a gentle way. For premium wines, the grapes are ground into vats with a mill and then poured onto the press by hand. In principle, a strong pre-clarification takes place after the pressing
. The young white wines are stored on the until shortly before bottling. Mash fermentation
of the red wines takes place in a punch tank with 10 to 15% juice extraction. Bottle-fermented sparkling wines are also produced. Premium wines include Nußdorfer Kirchenstück Sauvignon Blanc dry and Blanc Chardonnay brut (50 months yeast storage). About 50,000 bottles of wine are produced annually.
