The winery is located in the municipality of Korb in the German wine-growing region of
Württemberg. The wine-growing tradition of the family, which comes from South Tyrol, dates back to 1647. Since 1979, the wines have been vinified and marketed themselves. Today, the winery is run by Jens Zimmerle. Wine tastings and events are held in the 300-year-old vaulted cellar. The vineyards cover 15 hectares of vineyards in the single vineyards Berg, Sommerhalde, Steingrüble (Korb), Hörnle (Steinreinach), Steingrüble (Kleinheppach) and Wanne (Großheppach). They are 70% planted with the red wine varieties Spätburgunder, Lemberger, Dornfelder, Schwarzriesling, Trollinger, Muskat-Trollinger, Samtrot, Merlot, Cabernet Sauvignon and Zweigelt, as well as with the white wine varieties Riesling, Chardonnay and Sauvignon Blanc. The vineyards are cultivated according to the guidelines of
organic viticulture;
organic wines have been produced since the 2015 vintage.
The white wines are always temperature-controlled, cool fermented and
reductively vinified. They are matured in stainless steel tanks, with the highest-quality Sauvignon Blanc and Chardonnay wines being matured in barriques from the fermentation stage onwards. After fermentation, red wines generally undergo malolactic fermentation and, depending on the quality level, are matured in stainless steel tanks, wooden barrels or (including fermentation) in French and Swabian barriques for at least 18 months. The middle segment comprises varietal wines of international style that mature for at least eight months in used barriques. Premium wines are marketed under the "Goldadler" line, including the "Triologie" cuvée (Merlot, Cabernet Sauvignon, Zweigelt). Bottle-fermented vintner's sparkling wines, as well as noble brandies (fruit, berries, herbs, marc) and liqueurs are also produced
