The winery is located in the community of Heitersheim (Markgräflerland area) in the German Baden wine region. It was founded around 1844 by Wilhelm I., great-great-great-grandfather of the present owner Fabian Zähringer. After an interim sale to Martini & Rossi, Wolfgang Zähringer rejoined the company in 1986. He introduced comprehensive quality measures and started with the then still rarely practised organic winegrowing. Since 2010 Fabian Zähringer is the sixth generation of the family to be active in the winery. In 2010 he founded the wine house "Zähringer Zurich" in his second home town Zurich. In addition to the Zähringer wines from Heitersheim, organic wines from other growing regions are also sold there.

The vineyards comprise 15 hectares of vineyards in the individual locations Maltesergarten and Sonnhohle (Heitersheim), Schlossberg (Staufen/Grunern) and Castellberg (Ballrechten-Dottingen). They are planted with the red wine varieties Pinot Noir, Regent, Cabernet Sauvignon, Cabernet Franc and Merlot, as well as the white wine varieties Gutedel, Pinot Blanc, Pinot Gris, Chardonnay, Sauvignon Blanc, Gewürztraminer and Müller-Thurgau. The vineyard is cultivated according to the certified ECOVIN guidelines and since 2010 also according to the biodynamic DEMETER rules. This includes targeted greening of the vineyard, the use of biodynamic preparations and the renunciation of chemical synthetic pesticides and fertilizers

The carefully and selectively harvested physiologically ripe grapes are pressed slowly, depending on the type of wine, sometimes with whole grape content. The fermentation takes place spontaneously with the vineyard's own yeasts. Depending on the type of wine, the wines ferment in stainless steel tanks, in large wooden barrels, as a speciality of the house in Vierlig (special Markgräfler 600 l barrel) or in barriques. The red wines undergo the traditional mash fermentation. Malolactic fermentation is also permitted for white wines, depending on the vintage and type of variety

The wines are marketed in the lines "Vierlig" (extra dry), "Gutsweine" (dry litre bottles and a wide range of 0.75 litre wines mainly from the Maltesergarten and Sonnhohle), as well as the "Zähringer Löwe" (dry premium wines and noble sweet rarities from strictly selected grapes from the top plots), which are bottled without filtration. Biologically produced and bottle-fermented wines are also produced. Premium products include Pinot Gris SZ, Pinot Noir SR and Chardonnay Sekt Brut. Matured noble brandies are distilled in the own distillery. The winery is a member of the associations Generation Riesling, ECOVIN, DEMETER, Slow Food and VdaW (Association of the Agricultural Industry).
