The winery is located in Stammersdorf (Floridsdorf), in the north of the Austrian capital Wien. The approximately 100 year old traditional winery was run until the 1980s as a pure Heurigenbetrieb, until Ing. Fritz Wieninger Jr. took over the management of wine production. In 2005, a new production building was put into operation within historic walls. The vineyards cover 40 hectares; the cultivation areas are located on the slopes of the Bisamberg in south and southeast locations in the vineyards Breiten, Gabrissen, Herrenholz, Jungenberg, Rothen and Wiesthalen mainly on sandy, loamy and lime-rich loess.
On the Nußberg on the other side of the Danube, 15 hectares of vineyards are leased. Two thirds of the white wine varieties Grüner Veltliner, Pinot Blanc, Pinot Gris, Chardonnay, Sauvignon Bl anc, Riesling, Gelber Muskateller and Traminer are cultivated, as well as the red wine varieties Zweigelt, Pinot Noir, Cabernet Sauvignon and Merlot. In 2014, the Viennese Hajszan-Neumann winery with 20 hectares of vineyards was taken over; however, the brand name is maintained.
Since 2006, certified biodynamic viticulture has been practiced according to the rules of the respekt-BIODYN association. Pesticides (such as herbicides), systemic sprays and artificial fertilizers are completely avoided. Instead, infusions and biodynamic preparations are used. Flora and fauna are supported by a sophisticated cover crop of the vineyards. The focus is not on high yields, but on health, self-healing power and the quality of the vines and the wine.
The white wine grapes are destemmed (de-stemmed) and gently pressed, depending on the grape material or the desired wine type. The must is then fermented in temperature-controlled steel tanks, wooden barrels of various sizes and, in some cases, in barriques. The red wines are classically fermented on the skins either in closed tanks or, as in the case of Pinot Noir, in open vats made of oak. They basically go through malolactic fermentation and are then aged exclusively in barriques. The top line is called "Grand Select", which is bottled without filtration. The flagship of the house is the "Pinot Grand Select", which is produced in Burgundy style from areas with a strongly reduced yield.
Other premium wines are the barrique-aged "Chardonnay Grand Select", "Grüner Veltliner Kaasgraben", the red wine cuvee "Wiener Trilogie" (Zweigelt, Cabernet Sauvignon, Merlot) and the Wiener Gemischter Satz DAC, which is especially cultivated by the winery and is vinified in the categories "classic" and with the site designations "Bisamberg", "Nußberg" and "Rosengartl". Around 350,000 bottles of wine are produced annually. About one third is exported to about 60 countries with Germany and the USA as the most important customers. Sparkling wine and grape juice are also produced. The winery is a member of the associations Premium Estates of Austria, Tu Felix Austria, WienWein and Traditionsweingüter Österreich.
