The winery is located in the municipality of Birkweiler (area Südliche Weinstraße) in the German wine region of the Palatinate
. It has been family-owned for centuries, since 1889 it bears the name Scholler by marriage. Since 1991 it has been managed by Helmut and Bettina Scholler. The vineyards comprise 15 hectares of vineyards with about 40 plots in the locations Kastanienbusch
(Muschelkalk) and Rosenberg
(loess and loam) in the community of Birkweiler, as well as Herrenberg
in the community of Nussdorf. They are planted to 70% with the white wine varieties Riesling, Chardonnay, Pinot Blanc, Silvaner, Sauvignon Blanc and Gewürztraminer, and to 30% with the red wine varieties Pinot Noir, St. Lauren and Cabernet Sauvignon. The wines are fermented at a controlled temperature and, depending on their destination or wine type, matured in stainless steel tanks, large wooden barrels or in barriques. Fine spirits (marc, yeast, fruit) and bottle-fermented sparkling wines are also produced. The winery is a member of the Vinissima
wine growers' association.
