2021 VDP.Sekt Brut Nature "evoé!" Blanc de Noirs, Württemberg, Germany

Nutty, slightly smoky, tobacco-like and slightly ashy aroma with core fruit notes, yeast, a bit of mushrooms and butter. Cool, predominantly bright, bone-dry fruit, yeasty, herbal, smoky and nutty tones, a hint of tobacco, hinted dark berries in the background, medium-fine bubbles, noticeable acidity, some persistence, salty notes and herbs, almost cold character, very good, bitter finish with some grip and plenty of acidity.
