The winery is located in the municipality of Freyburg-Zscheiplitz in the German wine-growing region of Saale-Unstrut. It was founded in 1990 by Irene and Herbert Pawis with only 0.5 hectares of vineyards. Son Bernard Pawis took over the business in 1998 and laid the foundation for expansion with a newly built modern winery. racking In 2007, the winery moved from Freyburg to the lavishly renovated historic monastery estate in the Zscheiplitz district of Freyburg. A wine tavern is attached. Events organised by the winery enrich the cultural life of the region. Furthermore, young association concepts such as "Wein rockt" (Wine rocks), guided tours in the monastery courtyard and the collection of donations for the preservation of the monastery grounds are supported. As a recognised training company, young people are offered the opportunity for internships and further education. Worth mentioning is the principle of sustainability in production and operation with the use of solar energy for electricity generation, collection of rainwater for irrigation, and use of combined heat and power for heating and electricity generation

Today, the vineyards cover 13 hectares of vineyards, some of which are steeply terraced and have been extensively restored by the winery, and the historic vineyard walls are constantly being maintained. The vineyards are located in the single vineyards Edelacker and Mühlberg (Freyburg), as well as Sonneck (Naumburg). They are planted with the white wine varieties Riesling, Pinot Blanc, Pinot Gris, Müller-Thurgau, Silvaner, Bacchus and Kerner, as well as with the red wine varieties Dornfelder, Portugieser, Pinot Noir and Regent. Natural, environmentally friendly viticulture is consistently practised with needs-based fertilisation according to the results of regular soil analyses, cover crop and the use of plant protection products that are gentle on beneficial insects

The wines are vinified with controlled fermentation and individual maturation with the taste potential of the individual grape varieties typical of the region, predominantly dry and fruity. Special red and white wines mature in barrique barrels made of regional Triassic oak. Since the 2001 vintage, the Rieslings and Burgundies from the Freyburger Edelacker have been produced and marketed as Grosses Gewächs. In years with suitable weather conditions, ice wines are also pressed. Fine spirits (marc, yeast) and bottle-fermented sparkling wines are also produced. The wines are sold nationwide to end consumers, gastronomy and specialised trade customers. The winery has been a member of the VDP (Association of German Prädikat Wine Estates) since 2001
