The winery is located in the municipality of Retztstadt (Maindreieck area) north of Würzburg in the German wine-growing region of Franconia. In 1999, the business was relocated to the Eberstal valley on the outskirts of Retzstadt, where a new winery was built amidst vineyards. The family business is run by Petra and Rudolf May. The vineyards cover about 16 hectares of vineyards in the single vineyards Langenberg with the vineyards Der Schäfer and Himmelspfad (Retzstadt), Benediktusberg (Retzbach) and Johannisberg with the vineyard Rothlauf (Thüngersheim). The main variety, with about 70% of the area, is Silvaner, of which four hectares are planted with vines up to 60 years old. The other varieties cultivated are Pinot Gris, Pinot Blanc, Riesling and Rieslaner, as well as Pinot Noir.

Langenberg Retzstadt - Gewanne Der Schäfer und Himmelspfad

The vineyards are cultivated according to the rules of organic viticulture and were certified in 2016 (DE-ÖKO-806). In the dry wines with mostly only 2 g/l residual sugar (i.e. far below the limit of Franconian dry), only healthy material is used for the heavily yield-reduced grapes. In principle, spontaneous fermentation takes place. In the cellar, only a small amount of sulphur is used in most of the wines, and there is no use of oenological enzymes or fining agents. In years with suitable weather conditions, noble sweet Beerenauslese wines and ice wines are also produced. Bottle-fermented sparkling wines are also produced. Around 90,000 bottles of wine are produced annually. The winery is a member of the associations Naturland and VDP (Verband deutscher Prädikatsweingüter).
