A negative selection is carried out before the harvest in order to process only ripe and healthy grapes. The young wines remain on the for many weeks. The white wines are aged in steel tanks. The red wines all undergo the classic maceration
and some mature for many months in barrique. Premium wines are the Dunkelfelder Spätlese, aged for 22 months in two thirds new barriques, and a Cabernet Blanc ice wine. Grape juices, noble brandies (yeast, wine), wine jelly
, sparkling wines and bottle-fermented sparkling wines are also produced. Ice wines
are also produced in years with suitable weather conditions. About 35,000 bottles of wine are produced annually. The winery is a member of the Nußdorf Quality Wine Growers Association.
