The winery is located in the municipality of Ungstein/Bad-Dürkheim (Mittelhaardt/Deutsche Weinstraße area) in the German wine-growing region of Pfalz. In 1959, a move took place racking from the centre of the village to a newly built winery on the outskirts of the town. Today, the winery is run by Klaus Wolf. The vineyards cover 13 hectares of vineyards in the single vineyards Bettelhaus, Herrenberg (in the vineyards Am Mandelbaum and Siebenmorgen), Nussriegel, Spielberg and Weilberg (Ungstein), Musikantenbuckel (Freinsheim), as well as Nonnengarten and Osterberg (Bad-Dürkheim). Three quarters of the vineyards are planted with the white wine varieties Riesling (the leading variety with about half of the area), Chardonnay, Cabernet Bl anc, Gewürztraminer, Pinot Blanc, Auxerrois, Silvaner, Rivaner (Müller-Thurgau) and Muskateller, and one quarter with the red wine varieties Pinot Noir, Merlot, Cabernet Dorsa, Dornfelder and Blauer Portugieser.

Adolf Wolf began converting to controlled organic farming as early as 1980. The farm has been a member of Bioland since 1984. This includes a species-rich cover crop with legumes and wild herbs, as well as a consistent renunciation of herbicides and water-soluble synthetic nitrogen fertilisers. Instead, life in the soil is fed with waste from grape processing, the farm's own compost or purchased organic biofertiliser of plant origin. The selective grape harvest takes place over a period of six weeks, mostly by hand.

The further processing of the grapes in the takes place without mechanical stress, the clarification and fermentation of the grape must apart from minimal additions of bentonite without any aids. Only strictly limited amounts of sulphur are added. By not using any other treatment agents or fertilisers of animal origin, the wines meet vegan criteria. For certain wines, filtration is dispensed with. Depending on the type of wine, the wines are matured in stainless steel tanks or in barriques. The local wines are bottled in May and the special single vineyards in late summer. Bottle-fermented sparkling wines are also produced. JAnnually, around 70,000 bottles of wine are produced.
