They are planted with the white wine varieties Riesling, Pinot Blanc, Chardonnay, Gelber Muskateller, Auxerrois and Sauvignon Blanc, as well as with the red wine varieties Pinot Noir, Merlot, Cabernet Sauvignon and Dornfelder. Since 2012, the PIWI varieties Cabernet Blanc, Muscaris, Pinotin, Johanniter, Sauvignac and Satin Noir have also been cultivated. Since 2015, the cultivation has been converted to organic viticulture.
According to the philosophy of the farm, interventions are limited to the most necessary according to the non-invasive rule of "controlled doing nothing" in order to maintain sustainability and the natural balance. In the cellar, fining agents and technical interventions are completely avoided. The wines from the classic varieties are vinified according to the varietal type, while the top qualities ferment and mature in barriques and small 600-litre wooden barrels. The PIWI varieties are mainly used for the assemblage of cuvées. The premium wines are vinified from different varieties depending on the vintage. Secco (sparkling wine) and bottle-fermented sparkling wine are also produced. The winery is a member of the PIWI International working group.
