The winery is located in the municipality of Kolitzheim-Zeilitzheim between Volkach on the Mainschleife and the Steigerwald, in the German wine growing region of Franconia
. It was founded in 2012 by Christian Werr (viticulture and oenology studies Geisenheim
), Heiko Niedermeyer (wine business management Heilbronn University), as well as Alexander von Halem (hotelier and owner of the baroque castle Zeilitzheim with headquarters of the winery).
The vineyards cover two hectares in the single vineyard Eselsberg (Stammheim), which are planted with the white wine varieties Silvaner and Riesling as well as the red wine variety Domina. The cultivation is carried out in a near-natural way by planting
a large variety of plants to promote beneficial organisms
and natural fertilization
as well as dispensing with herbicides
The product range includes the varietal wines Silvaner, Riesling and Domina; the cuvées "Wolf jr.", named after the builder of Schloss Zeilitzheim (Philipp Gaston Wolf von Wolfsthal) (white wine) and the "Fuchs v. B." aged in barrique barrels (red wine), the white wine "Baron" (Silvaner) matured in barrique, the Rotling
"Melusine" and the sparkling wine "Petrini", named after the architect of the castle.
