The Arunda sparkling wine cellar is located in the municipality of Mölten (Meltina) above Terlan (around 20 kilometres from Bolzano) in the Italian wine-growing area of South Tyrol ( Trentino-Alto Adige region). Founded in 1979, the winery is located 1,200 metres above sea level, making it the highest in Europe. Wolfgang Tratter was appointed managing director and oenologist from 2023 and will continue to develop the product line. As cellar master at St. Pauls Kellerei in Eppan, he was responsible for viticulture and vinification and was also responsible for the development of the "Praeclarus sparkling wine". Only sparkling wines are produced using the classic bottle fermentation method (champagne method), which mature on the lees for at least 30 months and up to five years for Riserva qualities.
The varieties used for the cuvées are Chardonnay,Pinot Blanc and Pinot Noir. These come from winegrowers from very different areas and therefore soils (terroirs) in South Tyrol such as Buchholz near Salurn, Eppan-Berg, Girlan, Terlan and Kastelbell. Cultivation is co-ordinated with the winegrowers and the harvest date is precisely determined. The base wines are cuvéed after a maturation period in Mölten and then sparkling wines are produced. Various sparkling wine styles such as millesimato(vintage sparkling wine), blanc de blancs (Chardonnay), varietal cuvées and rosés are produced and marketed under the "Arunda" brand. Around 120,000 bottles are produced each year.
