The winery is located at Schloss Hohenbeilstein in the German wine-growing region of
Württemberg. It was acquired in 1959 by Eberhard Dippon, who began
organic farming as early as 1987. The farm was taken over by son Hartmann Dippon in 1991 after practical experience in France, New Zealand and California. The vineyards cover 14 hectares of vines mainly in the wholly owned single vineyard
Schlosswengert. They are planted with the red wine varieties Lemberger, Trollinger, Spätburgunder, Schwarzriesling, Samtrot, Regent and Muskat-Trollinger, as well as the white wine varieties Riesling, Weißburgunder,
Cabernet Blanc and Johanniter. Since 1994, the winery has been completely converted to
organic viticulture
This is done
cover crop with wild herbs and
legumes,
beneficial insects are used for pest control, and home-made
compost replaces artificial fertiliser. Rock flour, plant extracts and
bentonite are used to
strengthen the plants. In 2002, the farm was the only winery in Württemberg to be designated a demonstration farm with exemplary status for organic farming. In addition to Riesling, special attention is paid to the red wine variety Lemberger (Blaufränkisch), which is matured in barriques. In years with suitable weather conditions, high quality wines such as
Trockenbeerenauslese and
Eiswein are also produced. Some of the bottles are sealed with glass stoppers.
Brandy and bottle-fermented sparkling wine are also produced. The winery is a member of the
VDP (Association of German Prädikat Wine Estates), as well as the
Naturland and
German Barrique Forum associations
