The winery is located in the municipality of Faedo (province of Trento) in the Italian wine-growing area of Alto Adige ( Trentino-Alto Adige region). It was founded in 1975 by Mario Pojer (a qualified oenologist) and Fiorentino Sandri (who inherited vineyards in Faedo). The initial friendship developed into an innovative and quality-orientated family business that still exists today and is now partly run by the second generation.
The vineyards cover around 35 hectares of vines, some of which are on very steep slopes between the municipalities of Faedo and Grumes in Trentino. These sites benefit from an alpine microclimate with large temperature differences between day and night, which favours slow and aromatic grape ripening.
The white wine varieties Chardonnay, Kerner, Lagarino, Manzoni, Müller-Thurgau, Nosiola, Pinot Bianco, Riesling, Sauvignon, Solaris and Traminer as well as the red wine varieties Cabernet Franc, Cabernet Sauvignon, Franconia (Blaufränkisch), Groppello, Lagrein, Merlot, Negrara, Pinot Meunier, Pinot Nero, Rotberger, Schiava and Zweigelt are cultivated. The vineyards are cultivated sustainably, with minimal use of pesticides. A grape washing machine is used to remove dust, soil and residues before processing.
The aim is gentle processing with low oxidation, including the use of protective gases such as carbon dioxide to minimise the use of sulphur. Fermentation is carried out in temperature-controlled stainless steel tanks. Maturation takes place in large wooden barrels or in barriques, depending on the type of wine or grape variety. The wines are bottled without fining and without filtration. Sparkling wines are also produced using classic bottle fermentation and pétillant naturels using the méthode ancestrale.
The range includes sparkling wines (e.g. Extra Brut, Brut Rosé), sparkling wines (e.g. Solaris Méthode ancestrale), white wines (e.g. Müller-Thurgau "Palai", Bianco Faye, Nosiola), rosé wines (e.g. Vin dei Molini) and red wines (e.g. Pinot Nero, Rosso Faye). There are also dessert wines such as "Essenzia" and the liqueur wine "Merlino", which is made from Lagrein and fortified with the company's own brandy. Fine brandies(grappa, brandy, fruit brandy) and various wine vinegars and fruit vinegars are also produced.
