Hungarian winery with headquarters in the town of Sárospatak in the Tokaj-Hegyalja region. Since 1992 it has been owned by the French investor group C.F.G.V.T., which is managed by Jean-Louis Laborde and his son Ronan. Also part of the estate is Château Megyer as a second winery, both estates are run under the same Hungarian management and also share the cellar facilities in Bodrogolaszi. The vineyards cover 64 hectares of vines in the eponymous Pajzos site, planted with the varieties Furmint (50%), Hárslevelű (40%), Muscat Lunel (Muscat Blanc) and Oremusz (Zéta). The quality wines are vinified reductively, the aszús slightly oxidatively with air contact. The winery is a member of the "Tokaj Renaissance" association and produces all the typical Tokaj brands. The Aszú-Essencia vintage 1993 is considered particularly outstanding (see also under Century Wine). Only 5,000 half-litre bottles of this were produced. Fermentation in the barrel lasted over three years. The amber-coloured, viscous, oily wine has 530 g/l total extract, 435 g/l residual sugar, 12.5 g/l acidity and 4.72% alcohol by volume.
