The vineyard "Ökologischer Weinbau Kraemer" is located in the community of Auernhofen (area Maindreieck) in the German wine growing region of Franconia. It is managed by Hermann and Stepan Krämer. On 75 hectares of arable land, mainly bread cereals, vegetables, legumes and clovers are cultivated. There are also holiday apartments available. With the purchase of recultivated areas in the Tauber valley, viticulture was also started in 1984. Since 1990 the entire farm has been managed according to ecological criteria in line with the guidelines of the Naturland organic farming association.
The vineyards cover about four hectares of vineyards in the individual locations Hasennestle (Tauberzell) and Feuerstein (Röttingen). They are planted with the white wine varieties Silvaner, Müller-Thurgau, Johanniter, Bacchus and Riesling, as well as the red wine varieties Regent and Schwarzriesling. For base wines, grapes from certified organic colleagues from the Steigerwald are still purchased (Bacchus, Scheurebe). The wine cellar and bottle storage are located in historically old buildings on the farm.
The wines are matured by means of spontaneous fermentation without temperature control in stainless steel and large wooden barrels made of Franconian oak (half and piece barrels). They are stored on the until shortly before bottling, which is partly carried out without filtration. A late sulphurization takes place far below the legal limits. For some wines, 15 to 20% of maceration and macération carbonique are added. The premium wines are Silvaner Silex and Silvaner Muschelkalk 15. 20,000 to 24,000 bottles of wine are produced annually. Fine brandies and organic honey are also produced. The winery is also a member of the Fränkische Ökowinzern.
